View Full Version : Chicken with sun-dried tomatoes

Start with nice, plump chicken breasts and carefilly slice a pocket into it. Sprinke inide of pocket with a bit of minced garlic and some fresh ground black pepper. Then add a thin slice of cheddar (mozzarella is lovely, too) and some sun-dried tomatoes. Fold the chicken closed and then wrap in bacon. Heat some olive oil ina skillet til really hot and then place chicken breasts in oil with the side that bacon overlaps in the oil first (to make sure it seals shut). Fry gently on medium-low heat for about 4 min and then turn over and do the same. Then chuck in the oven for about 15 or 20 minutes on gas mark 6.

I've always made this but went to dinner at a friend's house and she had done the bacon which was a nice touch as keeps it really juicy and adds a lovely flavour. I like smoked bacon but you can use whatever you prefer. I love it with cheddar and onion mash, fried leeks (fried in oil left from chicken breasts) and broccoli and cauliflower.
