Have just started childminding and have a family if 3 waiting to start I'm unsure if I use one contract for the 3 children or a contract per child? Also what happens if I have children as one offs like holiday care or just inset days etc do I need a new contract each time?

One per child, it says so in small print on reverse of pacey contracts.

One contract per child as there can be differences in care - personnal details etc....

One offs - I wouldn't bother with a contract - just personal and emergency contact details etc...

There is no legal requirement for a contract - however it does provide some safeguard for default payments and conflict e.g. hours and holidays etc... and parent holiday/sick pay and charges. I would always use one per child for permanent/regular bookings.

One contract per child. In Wales even if it is a one day care we have to have a contract so I wrote a very simple one and get payment up front so there is no problem with non-payment.

As others have said one contract per child, but create a simple one off/occasional care contract that you can print off, then just fill in the child's name, address, contact details, hourly rate, doctors details, any allergies, sentence about permission to take in car, take photos, apply sun cream/nappy cream - get parents to sign/date and take payment in advance.
