Hi all I'm in need of some inspiration today. I have quite a variety and varied diet but I'm really unsure What to cook today. Any suggestions? I am allergic to cheese though.
What are you cooking today?

In need of inspiration too!

I'm finishing early today due to mindees being ill/away etc so only need to cook for us. I was going to do macaroni cheese ... But don't fancy that now!

I like gnocchi bake ... cook a tomato/garlic/onion/pepper sauce and cook gnocchi. stir together and bake in oven, nice with bits of mozzarella on top but easily left.

My other current favour quick meal is to cook onion/mushroom/chicken pieces ( or other meat/quorn piece ). Whilst that is cooking, cook cous cous and then, stir a spoon full or two of curry paste into the meat and then cook for a minute or 2. stir in the cous cous until all mixed, add a few chopped apricots and some flaked almonds ( or I add ground almond as my children don't like almond!; 0) )
(it's a bit like biryani)

We had chicken casserole with bulgur wheat for tea and will be having left overs for lunch with some added stock to make soup.

Reading that is making me feel very hungry. It's cottage pie for tea tonight here, thanks to reading this thread its reminded me I need to pop to the shop to but some potatoes as seem to of gone through more than normal this week!
I think I will have to try that suggestion another day but might replace the cous cous with rice as my son doesn't really like cous cous.

Just put a slimming world chicken curry in the slow cooker. Me and DH will have that tonight when DD is in bed. DD has school dinners on Friday so DH and I can have a date night. She will be having tomato soup for her tea I think.

maiseymog - that's a great idea, sending kids to dinner school and then having a date night. Though on the rare occassion I send mine to dinner school they choose a bap or a cold lunch. I'll have them warned!

Another great sounding recipe. Will have to try that soon although don't know how well the Cous Cous will go down!

Our favourite meal at the moment is Chicken and Chorizo jambalaya. Its great at clearing all the bits out the fridge (tomatoes, peppers, onion) Its really filling and as a family its something we all eat which is hard to come by.

Chicken & chorizo jambalaya | BBC Good Food (http://www.bbcgoodfood.com/recipes/1167651/chicken-and-chorizo-jambalaya)

Its easy to chop everything up and pop it in to simmer although it needs a stir so cant be left. I always have to add extra water too as 350ml of stock is never enough.

Another quick one which I got from ds' s cook book is fry off chorizo and pepperoni while you cook off pasta. When its all done stir it all intogether with your veggie doctored tomato sauce x

Next time you serve it they will be more used to it. I use cous cous all the time as it's so quick and easy .

We have cous cous with lamb burgers, salmon, any grilled meat, casseroles, chilli ....

I'm always so nervous when making something new as you know how fussy kids can be.

One of my mindees loves greek salad and I give him that with cous cous and warm pitta. He loves it. We some time have mushrooms stuffed with rice, red onion, and chorizo. I do top with cheese but dont have to.
