View Full Version : Alternatives to cucumber & tomato...suggestions please!

For lunch I do something light like sandwiches, pasta or jacket potato with cheese, ham, chicken etc

I always put cucumber, tomato, carrot sticks or slices of pepper with whatever I do, a combination of 2 a day. Surely there must be some alternatives I could provide? I just can't think of any. I've tried lettuce, but no one eats it and anyway, I don't ever think there's much substance to it.

Has anyone got any other suggestions?

Celery, baby corn, radishes, raw broccoli.

My kids like caesar salad (dressing on lettuce, with croutons) as an alternative. I also really like cold cooked vegetables so if there's leftovers from tea the night before I'll serve them up too. I have this thing about always serving green vegetables. You could also serve defrosted peas or sweetcorn. Or what about coleslaw?

What about grated beet root , mange tout, mini sweet corn, cress, I find they eat much more if LO been involved in growing or choosing and buying it x

My own children love frozen peas - still frozen that is! So do I come to think of it. I haven't tried it with my mindees yet - I haven't been doing this long and don't want to appear too weird! Tried a mindee with mini sweetcorn today but he wasn't impressed.

DS loves
sweet corn.
Peas.
Carrots.
Sweet potato cut in to chips and baked, sliced apple.
Bean sprouts
Button mushrooms
Cooked cold broc
Frozen French beans

Ok so he eats every thing even things I won't touch.

sweetcorn, baby corn & mini corn cobbettes, mange tout....tried lettuce didn't go down too well and I'm not brave enough to try them with beetroot yet!!! :o

Sugar snap peas are a favourite here. DD also likes raw turnip and raw Jerusalem artichoke, although I don't do them on a regular basis. Raw red or green cabbage too. DD likes asparagus but none of my mindees have liked it, not even the good eaters.

Raw lol! I've seen people walk past me in the street munching in it straight from the pack lol.

Both! If cooked, only lightly steamed though. :-)
