Baking today with my mindees as well all have sniffles and feel abit rubbish.
Banana and apricot muffins are today's project and of course it's 2 of our 5 a day ;)

Apparently 2 of my 3 hate bananas, so why are they asking for more cake??!!!!!

Wow they look and sound nice!!! I am rubbish at baking but I plan to include it in my planning so going to do a practice run with my own children. I tried it twice when working in the nursery and both times, despite following every instruction still turned out a mess! I left it to someone else then but this time Im determined no matter how many tries it takes!!!

They do look good. Any chance you could tell me how to make them. I am always looking for more ways to get fruit into my kids.

4oz butter
6oz self raising flour
6oz golden sugar
Teaspoon baking powder
2 eggs
6 tablespoons milk
Dried or fresh apricots and 3 bananas
Half a lemon to stop banana going brown and I always throw in lemon rind as well for extra flavour.

This makes 24 fair cakes or 15 muffins

Put in oven on low heat 160 degrees for about 20 mins

Once cold we used the other half of lemon to mix in with icing to put on top and then sprinkled over some edible gold glitter but of course you can use anything....

those look lovely x x x here is another really simple muffin recipie that i use...no butter ..uses oil instead really easy to make and you can add anything to them

300g self rasing flour
150g sugar
1 medium egg
175mls milk
125 mls veg oil
Preheat the oven to 190 / gas mark 5
Sieve the flour, add the sugar.
Mix the egg, milk and oil together.
Add the egg mix to the flour mix and mix it together.
Get rid of most of the lumps but don’t worry if its got a few left.
Add in whatever it is you are using to flavour the muffins… I used 2 chopped mars bars today but you can use practically anything. I often use those bags of frozen fruit that you can get from the supermarket (you don’t need to defrost it before using it). If you are adding fruit I would add about 150g – 200g.
Bake for about 20 minutes and when you get them out of the oven its nice to sprinkle some brown sugar on the top of the warm muffins.
