Please help!

I am really struggling with linking my observations to the EYFS. I used to work in customer services a few months back so big career change!
For example I have just completed 'water play' with one child. Filled some bowls up gave him different containers to play with in the water.
He was splashing about and lifting the cups up, pouring water out etc.

What would this cover on the EYFS??

Hi, I would say mainly

Physical Development - Moving and Handling, as he is lifting, pouring, holding, carrying, passing from one hand to the other etc.
Mathematics - Number , use of mathematical terms - more, less
Mathematics - Shape, space and measure - emptying and filling containers, understanding full and empty, language such as big, heavy, size and shape of container

I suggest you work at it from the other way round - read through the Development Matters guidance for the different ages and stages and get used to the wording and the way it fits together.

you will get a feel for what is mentioned in each of the areas of learning and it will make future obs much quicker.
