    Default Ideas for shortcrust pastry

    I'm looking for ideas to use up some shortcrust pastry I have left. Ideally not jam tarts as did that the other day

    Maids of honour? Pastry base with a bit of jam and a sponge cake topping- iced with Jamie's fruit icing - children love them.

    Lots of recipes use puff pastry but I like shortcrust - less messy too.

    mini quiches, line your bun tin ( or whatever you used for jam tarts) with the pastry, fry a little onion and bacon, mix together a little milk and an egg (or 2 depending on how much pastry you have), add some cheese, stir all together in a jug, spoon into the pastry cases, add a slice of tomato on top of each one, bake until set and light brown on top.

    Fly pie.

    Roll out the pastry. Put a pile of raison, currents or sultanas in the middle.
    Add a couple of knobs of butter and lots of brown sugar on top of the fruit.
    Brush water on the edges of the pastry and fold the over to seal the fruit in.
    Brush with milk and sprinkle some sugar on top.
    Cook in a hot oven until golden.

    This is my favourite way to use up pastry, and it has fruit in so must be a bit healthy.
